Between Flames and Vines

A must-visit in the Colchagua Valley is having lunch surrounded by vineyards in a wonderful setting, at the heart of our "Finca de Apalta." All of this, with the unique signature of the renowned chef, Francis Mallmann, and the company of an extensive selection of Montes Wines, where you can choose from various and different harvest years.
The proposal highlights meats, fish, and vegetables, cooked over different types of fire in the dome located at the center of the restaurant, where our visitors can observe how the ingredients of the menu are grilled, smoked, and baked.

One of Argentina’s most famous chefs, winner of important international awards, author of the book "Seven Fires", and featured in one of the best episodes of the Netflix series Chef's Table, is the chosen partner to bring our dream of offering international-level gastronomy to Viña Montes.
Francis Mallmann's passion for wood-fire cooking is the foundation of the Fuegos de Apalta culinary proposal. As he has stated, "Cooking is a romance, a romance that unfolds with patience and waiting for the exact point of the flames, a moment in which Mallmann is an expert."
